This Rosle whisk does an excellent job beating eqq whites. It incorporates much air very quickly. I would say it takes about five minutes to get to the soft peak stage in an unlined copper bowl. This is for eight egg whites. However, with that amount of liquid/air I need a bigger whisk to maintain efficiency. I have been using this whisk to finish the job and it takes longer than it should, but this is not a reflection on the piece. Rosle makes a 14.5" and 16.5" balloon/beater whisk that I am going to order to solve this problem.
The quality is excellent. I only buy 18/10 stainless steel because it resists corrosion the best. I wash all my utensils by hand because I need them the next day, so corrosion is not as big of an issue with me. However, if you intend to use your dishwasher it is paramount that you buy 18/10. I do not buy 18/8. I consider this heirloom quality and that is what I expected. I rely on it often and I do not want to buy a new whisk every few years.
I use this for souffles, french merinques and italian meringues.
I recommend this piece.
